Flash pasteurisation is the heat treatment of the beer prior to bottling, canning or keg racking. It destroys yeast and bacteria. If these micro-organisms are not destroyed, they will reproduce generating off flavours, off aromas or hazes in the beer. If carried out correctly, pasteurisation will ensure beer quality and provide a longer shelf life.
It is critical that all equipment that comes into contact with the beer post the flash pasteuriser, is also sterile. Note that rubber hoses cannot be adequately sterilised and therefore hygienic stainless steel process pipework and fittings should be used in this area.
Flash pasteurisers are relatively expensive to purchase but have virtually no on-going costs.
